Split Pea Soup

Easy soup to make, and perfect for a cool fall day.

1 onion, diced fine
1/2 cup celery, diced fine
1 cup carrots, diced fine
3/4 gallon chicken stock
1 lb. peas
1 bay leaf
1/4 tsp. crushed red pepper
1/2 lb. smoked ham, diced

Place all ingredients in a stock pot and bring to a boil.  Simmer until peas break down and soup thickens, about 2 hours.
